Is Friday here yet? Because we’ve got ourselves a party in a cupcake! I asked a baker friend of mine to come up with a cupcake recipe for me, and this is what she came up with…a Margarita Cupcake! Fits me perfectly don’t ya think? :)

Here is the recipe:

Cupcakes:

2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup milk
1 teaspoon vanilla extract

Frosting Recipe from Sweet Peas Kitchen

1 cup unsalted butter, room temperature
6 cups powdered sugar
1 tablespoon lime juice
1 tablespoon tequila
1/8 teaspoon salt
1 teaspoon lime zest

Cupcakes:

Preheat oven to 375F. Line muffin tin with liners, set aside.

Cream butter and sugar until light and fluffy. Add in eggs, flour, baking powder, and salt. Add in milk, beat well, and stir in vanilla.

Bake for about 16 minutes or until toothpick comes out clean. Allow to cool before frosting. Once cooled, lightly brush cupcakes with tequila.

Frosting:

Beat butter until it is fluffy. Add in powdered sugar, salt, lime juice, and lime zest. Mix until thick and creamy. Pipe onto cupcakes using large Wilton tip to achieve look in photo.
