Corn is in season, or coming in, cucumbers and squash are starting to produce in abundance and we see the first of fresh green beans as well. Farmer’s markets are in full swing and gardens are flourishing. Can, freeze or dry fresh vegetables now for good eating during the winter months!
It is important to eat vegetables in season, not only for the economical reasons, but also for the nutritional reasons. Try to maintain your diet consisting at least 8 servings of fruits and vegetables per day. Fresh and in season whenever possible. They will keep the doctors away!!
