So I love to bake, but my husband says it ends up costing a lot more because I bake A TON! Well, these peanut butter cookies have been my savior! AND it gives you a reason to use the $.55 JIF coupon from a while back! There’s only 4 ingredients too! My dad swears that every peanut butter besides JIF is junk but I made these with the Target brand and he didn’t even know!
Preheat oven to 350*
1 cup peanut butter (can use any kind crunchy or smooth)
1 cup sugar
1 egg, lightly beaten
1 tsp baking soda
Cream the peanut butter and sugar together until well blended and fluffy, add the egg and baking soda and cream until all ingredients are thoroughly incorporated. I usually take at least 1-2 minutes for this part. Roll dough into balls and place on cookie sheet spaced about 2″ apart. Criss cross with a fork and bake for 8-10 minutes until puffed and golden brown! You may store these at room temperature for 5 days in a sealed container! Trust me, they won’t last that long! They are SUPER easy and SUPER cheap!
